Our Food Philosophy
日本語|English
- At ARUN, we try to be thoughtful about the ingredients we choose for our food, giving priority to what we grow ourselves and what is produced locally.
- Because we also run our own farm, we use as much of our own produce as possible, including vegetables, herbs, spices, and fruit grown on our farm.
- For ingredients we cannot grow ourselves, we give priority to fresh produce grown by local farmers in Ishigaki and the surrounding area.
- We also try to choose seasonings and processed foods that preserve the simplicity of their ingredients as much as possible.
Our basic approach to choosing ingredients is:
- We prioritize produce grown on our own farm.
We use vegetables, herbs, spices, fruit, and other produce from our farm whenever possible. When necessary, we use a minimum amount of agricultural chemicals for pest control and disease prevention, and chemical fertilizers for cultivation. - For produce we do not grow ourselves, we prioritize locally grown ingredients.
We give preference to fresh produce grown by local farmers. - We choose simple seasonings whenever possible.
We look for products that are additive-free or contain as few additives as possible. - We choose processed foods carefully.
When we use processed foods, we look for products with simple ingredients and as little processing as possible.
Through these choices, we hope to connect what we grow ourselves and what is produced locally with the food we serve, while keeping the ingredients as close to their original form as possible.
